Frozen Apricot Bellini with Sticky Balsamic Pearls

Everyone loves a bellini, right? This one is delicious and out of this world! Developed exclusively for Sticky Balsamic by @omgheebyjerilee, you’ll love it!

 

Ingredients:

2-3 fresh apricots, pitted and chopped

3-4 ice cubes

1 tsp sugar syrup, optional

½ cup sparkling water or lemon lime & bitters, chilled

¼ cup Grenadine

Fresh mint to garnish

½ tsp Sticky Balsamic Premium Fig Pearls, to garnish

 

Method:

In a blender, whiz the apricots, ice cubes, sugar syrup (if using) and a bit of the sparkling water until smooth.

Pour into champagne flutes until half full and add more sparkling water!

Drizzle the Grenadine. It will settle to the bottom creating two layers.
Garnish with Sticky Balsamic Premium Fig Pearls & mint leaves.

Serve immediately. Cheers!
