Fancy a potato salad with a difference?!
Then look no further.
We tried this balsamic roasted potato salad and absolutely loved it, so thought we’d share it with you!
40ml good quality olive oil
1 1/2 tbsp Sticky Balsamic Original
2 tbsp honey
1 tsp Paprika
1 cloves minced garlic
Salt and Pepper to taste
4 large red potatoes quartered (leave the skin on)
300g Bacon (diced)
2-3 Spring Onion (thinly sliced)
Fresh parsley (finely chopped)
Preheat oven to 200 degrees and line a baking tray.
Drizzle quartered potatoes with olive oil and stir to coat.
Spread potatoes on baking tray and cook until golden-brown (30-40 minutes).
Cut bacon into small pieces (or use ready diced bacon), and fry with a little olive oil until cooked.
Mix oil, Sticky Balsamic Original, honey, paprika, garlic, salt and pepper in a bowl.
Remove potatoes from oven and allow to cool.
Coat potatoes with mixture, sprinkle with bacon, parsley and spring onion.
Serve at room temperature and enjoy!
